A very simple thing with what's in the fridge! Sweets


Yesterday Agata worked all day, then we went home at night, together. What to do? In the mini eggplant, tomatoes, mozzarella e. .. ah, looks a bit ', a box of puff pastry. So easy, you invent a pie so-called "Mediterranean". Agata to tell the truth would have preferred the pasta brisa, but desperate times for desperate measures. And anyway is that the pastry can be defined just a bad, nor a last resort.



INGREDIENTS 1 eggplant 1 medium tomato

mozzarella cheese 2 eggs 1

1 box of puff pastry
A sprinkling of dried basil (preferably fresh one of course but we had not)

Olive oil Salt, to taste (I could not wait to tell!)

PREPARATION

Cut the eggplant into slices (rings) are not too thick and grill, sprinkling salt on each side.
Cut the tomatoes and the mozzarella into thin slices. Add salt.
Heat oven to 200 degrees.
Spread on a baking tray and prick the pastry, then place the slices of grilled eggplant, tomatoes and mozzarella cheese, alternating until all the ingredients.
Beat eggs, add a pinch of salt and basil and pour over vegetables and mozzarella.
Fold edges of dough with olive oil and spalrmarli that will make the edge crisp and golden.
Bake for about 30-40 minutes.
